Ingredients:

2 cups fresh spinach, wilted and drained

1 cup feta cheese, crumbled

1 onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon pepper

1 package phyllo dough

1 egg, beaten (for egg wash)
Instructions:

Preheat your oven to 400°F (200°C).

In a large bowl, combine the wilted spinach, crumbled feta cheese, chopped onion, minced garlic, dried oregano, salt, and pepper. Mix well.

Unroll the phyllo dough and cut it into rectangles (about 6x8 inches).

Brush a 9x13 inch baking dish with egg wash.

Place a rectangle of phyllo dough in the prepared baking dish and brush it with more egg wash.

Spoon a portion of the spinach and feta mixture onto the phyllo dough, leaving a small border around the edges.

Roll up the phyllo dough tightly, tucking in the sides as you go. Place seam-side down in the baking dish.

Repeat the process with the remaining phyllo dough and filling.

Brush the top of the spanakopita with more egg wash and bake in the preheated oven for 45-50 minutes, or until golden brown.
